Thai mango sorbet

Serves 10

If you have an ice cream maker, prepare it
otherwise, put a ceramic or glass bowl in the freezer
400 g mango flesh (about 4 medium mangos)
200 g sugar
put mango flesh and sugar in blender
whiz until smooth
3 tbsp coconut milk
1 tbsp lemon juice
add coconut milk and lemon juice
put in freezer until it's not quite frozen
250 ml whipping cream
put whipping cream in fridge
when mango and cream are nicely cold, mix them
put the mixture into ice cream maker or chilled bowl
